Does Your Diet Age Your Skin? On UV Radiation, Sugar, and Unhealthy Fats
Yes, your skin ages by what you eat. UV radiation is the best-known culprit, but nutrition plays at least as large a role through the same biological mechanisms. And the tricky part: this also applies if your blood sugar is completely normal.
UV radiation: more damage than you think
Sunscreen is rightly a staple of skincare. UV radiation directly damages collagen and elastin, breaks down the structure of your skin, and visibly speeds up wrinkle formation.
What is less well-known: UV also affects the immune cells in your skin. Macrophages, the most common immune cells in the skin, become chronically inflamed with prolonged exposure. This triggers a process that researchers call "inflammaging": low-grade, persistent inflammation that accelerates aging from within. You don't see it immediately, but the process just goes on (Tenchov et al., 2024).
How sugar damages your collagen
There is a process called glycation. Sugar molecules spontaneously attach to proteins in your skin, including collagen and elastin. It's not an enzymatic process your body regulates. It just happens, as a chemical reaction between sugar and protein.
The end result is AGEs: advanced glycation end products. They make collagen stiffer, less resilient, and more prone to breakdown. Visible result: wrinkles, loss of firmness, a dull skin. Skin collagen has a half-life of about 10 years. So, the same collagen molecule remains in your skin for years and is exposed to this process all that time (Nguyen & Katta, 2015).
Ultra-processed foods speed up this process. The rapid sugar spikes after eating heavily processed products give glycation extra fuel. At the same time, the inflammatory compounds in ultra-processed products promote the same inflammaging that UV already triggers.
What bad fats do
Not all fats are equal. Trans fats and a structurally high intake of omega-6 fatty acids, as found in many processed snacks and cheap vegetable oils, promote inflammation in the body. Also in the skin. Omega-3 fatty acids from, for example, fatty fish do the opposite: they inhibit inflammatory processes and support the skin barrier.
"But my blood sugar is fine"
This is the point where it becomes unexpected for many people.
Glycation doesn't wait until you develop insulin resistance or type 2 diabetes. Because skin collagen stays in your body so long, it is exposed to sugar molecules in your blood for years, even with completely normal blood sugar levels. Research confirms that AGE accumulation in the skin occurs not only in diabetes patients, but also during normal chronological aging (Nguyen & Katta, 2015).
Good insulin sensitivity protects you against accelerated glycation that you see with chronically elevated blood sugars. But the basic process does not stop. A structurally sugar-rich diet increases the glycation pressure on your skin, regardless of how your fasting glucose looks.
You don't have a free pass. Not even if you're metabolically healthy.
What you should avoid
Added sugars, sugary drinks, and ultra-processed products directly increase glycation pressure. Foods high in trans fats and cheap vegetable oils enhance inflammation in the skin via a second route. Smoking accelerates oxidative stress and worsens both processes.
What does help
Vegetables, legumes, and whole grains provide antioxidants that inhibit oxidative stress. Fatty fish and other sources of omega-3 suppress inflammatory processes. Sufficient proteins support the production of new collagen. And sunscreen remains important, it just doesn't cover everything.
Your skin is a reflection of what happens from within. Nutrition and sun protection are not competitors. You need both.

Does exercise affect skin aging? Indirectly, yes. Exercise improves insulin sensitivity, which inhibits the accelerated glycation from sugar spikes. It also reduces low-grade inflammation in the body.
